BENACHIN


Benachin is a one pot dish

INGREDIENTS:

1.   One cup of cooking oil
2.   Two onions
3.   One garlic clove, (chopped)
4.   One Squash (Butternut will do), (peeled & chopped)
5.   Two tomatoes, chopped or canned/peeled
6.   One hot chilli pepper
7.   One sweet green pepper, chopped
8.   One spoonful of tomato paste
9.   One bay leaf
10. Two carrots, chopped
11. One cabbage, chopped
12. One bouillon cube
13. One piece of dried fish
14. Two cups of rice
15. Salt, cayenne pepper & black pepper
16. Two/three pounds of any fresh fish



HOW TO COOK:

1.  Heat the oil in a large cooking pot
2.  Fry the onions & garlic on a hot heat for one minute
3.  Fry the fish each side for a few minutes then put aside
4.  Add the Squash/butternut & cook for a few minutes, stirring
5.  Add the chilli & green peppers cook for a few minutes
6.  Then add the bay leaf/bouillon cube/carrots/cabbage/2 cups of water/tomato paste
& tomatoes and bring to the boil
7.  Stir in the rice, add the dried fish & season
8.  Reduce the heat & simmer until everything is nice and tender

YOU CAN USE FISH OR MEAT FOR THIS DISH

This is also a one pot recipe
INGREDIENTS:

1.   Cooking oil
2.   One chopped onion
3.   One chopped garlic clove
4.   Tomato paste/canned tomatoes or a few fresh tomatoes
5.   One hot chilli pepper
6.   Juice of a lemon
7.   Squash/eggplant chopped
8.   One/two cups of natural peanut butter
9.   Bouillon cube or Maggi if you can get it
10. Salt/cayenne & black pepper to season
11. One pound of stewing meat

HOW TO COOK:

1.   Heat oil in large cooking pot
2.   Brown the meat together with the onions
3.   EXCEPT the peanut butter, add all the other ingredients and sufficient water to cover them
4.   Bring to the boil, then reduce the heat and simmer until done
5.   Stir in the peanut butter and continue to simmer, stirring regularly
6.   Serve with boiled rice
